I realize this may be an unpopular opinion, but after 7 months of unemployment, I really have no motivation to get a job beyond the financial need. I really think that, if I had a steady income, I could entertain myself indefinitely. Alas, I need money to spend on my entertainment. Molly has been experiencing the fun of unemployment with an income… in the form of maternity leave though, so with a little bit more work involved than true unemployment. But still, I can’t imagine having to stop the income + no work lifestyle.
So when she recently started work again, and I was on duty for watching my niece while she worked on the first day, I came prepared to boost spirits for the start of work. Namely, a sweet treat for the afternoon: these PB Cup Cookies. Luckily, she didn’t actually end up having to work that day, due to incompetency from her boss and HR. The cookies were still enjoyed, probably more so because she didn’t have to work.
I adapted Joy the Baker’s Just Two Cookies recipe, which really should be Just Three Cookies because they always turn out enormous. I subbed in some cocoa powder and added Reese’s, and voila! It’s a very adaptable recipe (as seen from other times I’ve adapted it), which is convenient for such a small recipe.
Now that I’m not in class, but will be having my parents in town a lot more, I may end up trying out more small-batch recipes to maximize the amount of baking I can do and share. After all, what else am I doing?
So whether you’re working or not, I recommend making these cookies. They come together in about 10 minutes, and then bake for 12. Perfect for the single working professional, or your unemployed friend who is entertaining themselves in the kitchen on a random Wednesday.

Ingredients
4 tablespoons unsalted butter, melted
1/4 cup lightly packed brown sugar
2 tablespoons powdered sugar
1 large egg yolk
Splash of vanilla extract
1/4 cup + 2 tablespoons all-purpose flour
2 tablespoons cocoa powder
Pinch of sea salt
1/4 teaspoon baking soda
A handful of mini Reese’s + more to smash on top
Instructions
- Place a rack in the upper third of the oven and preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set it to the side.
- In a small saucepan, melt butter until bubbling. Remove from the heat and whisk in the brown sugar until it feels like the sugar has started to dissolve in the butter. If it feels like the butter is separating from the sugar, that’s ok – keep going. Whisk in the powdered sugar. This might feel like a clumpy mess, but I promise the lumps will whisk out.
- Whisk in the egg yolk and splash of vanilla until emulsified, smooth and glossy.
- Add flour, cocoa powder, salt, and baking soda and stir with a spatula until no dry bits remain.
- Add the chopped Reese’s and work quickly, because the chocolate will start to melt in the warm pan.
- Fold the Reese’s throughout the dough and quickly dollop in two globs (of course you could do three or four globs) on the prepared baking sheet. Dot with a few more Reese’s and sprinkle with extra sea salt.
- Bake for 12-14 minutes until golden around the edges and still slightly soft in the center. Remove from the oven and see how long you can let them cook before eating them straight off the baking sheet.
