Ingredients
Avocado Brownies:
- 8 ounces of melted dark chocolate
- 2 well mashed avocados
- 4 eggs
- 1 cup of sugar
- 1/2 cup of cocoa powder
- 1/2 cup of almond meal
- 1/2 tsp salt
- 2 tsp vanilla
Peanut Butter Greek Yogurt Frosting
- 8 oz plain Greek yogurt
- 3 Tablespoons peanut butter
- 2 Tablespoons cream cheese (low fat or full fat)
- 2 Tablespoons maple syrup
- 2 teaspoons vanilla extract
Instructions
Make the brownies:
- Melt the chocolate in a double boiler and set aside.
- In the bowl of an electric mixer, whisk together the eggs and the sugar at mediu high until VERY light and doubled in volume. Gradually add in the melted chocolate.
- Stir in the almond meal, cocoa powder, salt, and vanilla. Blend in the mashed avocado.
- Pour into a greased square baking pan.
- Bake at 350 for 20 – 25 minutes.
Make the frosting:
- Add Greek yogurt and peanut butter to a medium bowl. Beat on medium speed for 1 minute until combined.
- Add the cream cheese and maple syrup, beat for 2 minutes until combined and creamy. Add the vanilla extract and beat until smooth. Taste the frosting and add more maple syrup if desired.
- Let brownies cool completely before frosting and cutting.
