I recounted the tale of my carrot addiction in a post recently. It was at its peak when Molly was living at home after college. And during that year, she made a green goddess dressing a lot. It was the first time I ever had it, and it was great for dipping carrots in. I didn’t know it was a common dressing, I thought she’d discovered it. I also didn’t realize that one of the main ingredients was my new favorite herb… basil!
Since my basil plant is producing so much basil, I made some green goddess dressing. And I will probably start making it and keeping it on hand again. Especially since I’ve discovered these sandwiches!
Green goddess dressing, mozzarella, avocado, and cucumber. If you’re making them cold, the original recipe included sprouts. But since it’s October and I wanted these grilled, I left those out. They’re a bit unlike regular grilled sandwiches, because you sort of grill each piece of bread and then assemble it on a plate. You could probably assemble it and grill it like normal, but I did not trust myself to flip a sandwich with cucumber in the middle. I also didn’t want the cucumber cooked.
But the extra step of grilling and then assembling is not that big a deal, and totally worth it. These were really great. Green goddess dressing pulls it together, and avocado and mozzarella means it does not hold back on the fats. In a good way. The cucumber adds the crunch, and ties is all together.
The only complaint I have is how hard it is to take photos of sandwiches!! I tried three separate times and could not get photos I was really happy with. As much as my food photography skill shave developed over the years, some foods are just hard to photograph. Sandwiches have to be pretty stylized to look good, and often on a specific type of bread, and often wrapped up in parchment to keep everything contained. But this is not a sandwich that cares about vanity! It just cares about being a really good sandwich! Perhaps a lesson there for us all, hm?
So, go make the ugly sandwich. Love the ugly sandwich. The ugly ones are the most interesting anyways!

Blend together basil, chives, mayonnaise, Greek yogurt, and olive oil. Once homogenous,
Butter one side of each piece of bread, and spread green goddess sauce on the other. Place them, butter side down, on a pan on the stove to start browning. Layer mozzarella on both pieces, and let cook until toasty and the cheesy is getting melty.
Remove from heat and add sliced cucumber on one piece and sliced avocado on the other. Salt and pepper to taste, and then put together as a sandwich.
You can also make this untoasted, in which case you just put all the ingredients on your bread and enjoy! If enjoyed cold, this would be good with sprouts.
