Green Goddess Sandwich

Ingredients

1/4 cup basil
1/4 cup chopped chives
1/4 cup mayonnaise
1/4 cup plain whole-milk Greek yogurt
2 Tbsp. extra-virgin olive oil, plus more for drizzling
1 lemon, halved, divided
4 slices multigrain bread
8 oz. mozzarella, sliced 1/4″ thick
1 avocado, thinly sliced
1/4 cucumber, thinly sliced
Kosher salt, freshly ground black pepper

Instructions

Blend together basil, chives, mayonnaise, Greek yogurt, and olive oil. Once homogenous, 

Butter one side of each piece of bread, and spread green goddess sauce on the other. Place them, butter side down, on a pan on the stove to start browning. Layer mozzarella on both pieces, and let cook until toasty and the cheesy is getting melty.

Remove from heat and add sliced cucumber on one piece and sliced avocado on the other. Salt and pepper to taste, and then put together as a sandwich.

You can also make this untoasted, in which case you just put all the ingredients on your bread and enjoy! If enjoyed cold, this would be good with sprouts.
