Monster Cookie Brownies are like a monster cookie had a baby with a brownie. Brownies are stuffed with peanut butter chips and M&Ms, then frosted with an out-of-this-world peanut butter oatmeal cookie dough frosting that deserves it’s own fanfare and could easily be eaten on spoon.
Remember when we made Oatmeal Cookie Dough Whoopie Pies a couple weeks ago? I don’t know about you, but I couldn’t get that oatmeal cookie dough frosting out of my head. I felt like by adding oats to the tried-and-true cookie dough frosting situation we had thrown open the door to a whole new world of cookie dough-based possibilities.
The first possibility that came to mind? Adding peanut butter. Because obviously. I don’t know about you, but Audrey and I will and do add peanut butter to almost anything edible. We once tried a peanut butter cheeseburger. It was kind of a game changer, not gonna lie.
Once I (mentally) added peanut butter, it all came together. Oats + peanut butter leads me to only one conclusion: Monster Cookies. And it gets even better, because we’re putting them on top of brownies. Is your heart beating faster? Because mine is.
To achieve maximum monster cookie effect, I stuffed these Monster Cookie Brownies chock full of peanut butter chips and M&M’s before frosting them with peanut buttery cookie dough frosting textured with finely-ground oat flour. Never let it be said that I baked anything by halves.
These brownies are stuffed (seriously, stuffed) with chocolatey, oat-y, peanut buttery flavor. Every single bite bursts with moist brownie, peanut butter chips, and M&M’s, wrapped up in a fluffy cloud of peanut butter oatmeal cookie dough frosting. Yes, it’s a lot. Yes, I can’t get enough.

Ingredients
Monster Cookie Brownies
- 1 box brownie mix
- 1/2 cup M&M’s
- 1/2 cup peanut butter chips
Peanut Butter Oatmeal Cookie Dough Frosting
- 1 stick unsalted butter, softened
- 2/3 cup peanut butter
- 1/3 cup brown sugar
- 1/3 cup oat flour**
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 2 cups powdered sugar
- 4 tbsp heavy whipping cream
Instructions
Make the brownies:
- Mix brownies batter according to box instructions.
- Fold in M&M’s and peanut butter chips.
- Bake according to box instructions.
Make the frosting:
- In a large bowl, beat together the butter, peanut butter, and brown sugar until creamy and fluffy, about 2-3 minutes.
- Beat in the oat flour, salt, and vanilla. Gradually beat in the powdered sugar.
- Beat in the heavy cream and beat another 1-2 minutes or until the frosting is fluffy.
Notes
**You can make oat flour by putting 1/3 cup quick oats in your food processor and processing until it becomes a fine powder.
