What if I told you that you could have decadent, sweet, flavorful, and delicious french toast for breakfast – and feel 100% good about it? If that sounds too good to be true, I get it. But I am here to tell you that it is not only true, but you are literally one easy recipe away from enjoying some of the tastiest AND healthiest french toast of your entire life.
This Paleo Bread French Toast is gluten-free, has no added sugar (!), is dairy-free (depending on your toppings), and paleo. I’m not personally gluten-free, dairy-free, or paleo (although I have cut added sugar out of my daily diet), but you don’t have to follow any particular diet to make this paleo bread french toast. Minimizing the amount of gluten (often found in refined carbs), dairy (commonly coinciding with high-sugar content, like in ice cream and flavored yogurt), and sugar (literally in so many things it doesn’t need to be added to) you eat is only a good thing – especially when it comes to foods that are already indulgent, like french toast!
The foundation for this Paleo Bread French Toast is a paleo bread recipe I created to mimic the delicious paleo bread sold at Erewhon natural foods market in Los Angeles. It is soft, thick, nutty, and so satisfying. It couldn’t get any more delicious – except that we’re turning it into french toast. Holy smokes.
Turning this paleo bread into paleo bread french toast means that we’re adding a creaminess to the inside, a buttery crispness to the outside, and subtly spiced warmth to the whole thing. But what we really need to talk about is toppings.
I topped my Paleo Bread French Toast with full-fat plain yogurt, spoonfuls of no-sugar-added Berry Chia Jelly, and generous drizzles of almond butter. Between all the healthy fats and fiber, it kept me full for hours. Can you say that about your standard sugary french toast recipe?

Paleo Bread French Toast
Ingredients
French Toast
- 8 slices paleo bread
- 4 eggs
- 2 egg yolks
- ½ cup unsweetened vanilla almond milk
- ½ teaspoon vanilla power
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 2 tablespoons butter
Instructions
- Heat oven to 285°F and cover a baking sheet with parchment paper.
- Slice the paleo bread into 3/4-inch thick slices. Arrange slices on the baking sheet in a single layer and bake for 12-15 minutes to dry out the bread.
- Reduce oven temperature to 200°F and place empty baking sheet covered in aluminum foil inside.
- In a small casserole dish, whisk together the eggs, egg yolks, almond milk, vanilla power, cinnamon, and salt until well combed.
- Soak the bread in the custard mixture, 2 pieces at a time for 1-2 minutes per side. Use a slotted spatula to flip.
- While the bread is soaking, place a large frying pan or skillet over medium-high heat and melt the butter on it.
- Cook french toast one slice of bread at a time. Lift bread out of custard soak using slotted spatula to drain off excess liquid before placing on the skillet. Cook bread for approximately 1 ½ – 2 minutes per side or until golden brown. Reduce heat if bread is cooking too quickly.
- As slices finish cooking, place them on the baking sheet in the oven to keep warm until serving.
