Ingredients
- 1/2 cup (1 stick) cold butter cut into small cubes
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1 egg
- 1/4 cup peanut butter
- 1 1/2 cups flour
- 1 tablespoon cornstarch
- 1/2 cup oats
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup PB&J M&M’s
- 1 bag chopped freeze-dried strawberries
Instructions
- Preheat oven to 410 degrees.
- In a large mixing bowl, cream together cold cubed butter, peanut butter, brown sugar, and sugar for 4 minutes or until creamy.
- Add egg and mix well.
- Stir in flour, cornstarch, oats, baking soda, and salt. Mix until just combined to avoid overmixing. Stir in M&M’s and strawberries.
- Separate dough into large balls and place on lightly colored cookie sheet. They are bigger than you think! You will fit 4 cookies on one large cookie sheet. The dough makes 4 extra large cookies, or 8 normal sized ones.
- Bake for 9-12 minutes or until golden brown on the top. Let them rest for at least 10 minutes to set.
