Apple Butter Whoopie Pies with Peanut Butter Filling


Ingredients

Apple Butter Whoopie Pies

  • 1 1/2 sticks unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup (lightly packed) light brown sugar
  • 2 eggs
  • 1 cup apple butter
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup heavy cream

Peanut Butter Filling

  • 1/2 cup creamy peanut butter
  • 1/2 stick butter, at room temperature
  • 1 cup powdered sugar
  • 2 to 3 tablespoons milk
  • 1 teaspoon pure vanilla extract

Instructions

Whoopie Pies

  1. Preheat the oven to 350 degrees F.
  2. In a large mixing bowl, beat the butter and sugars until light and fluffy. Add the eggs, one at a time, and mix until well blended. Mix in the sweet potato puree and vanilla extract.
  3. Combine the flour, baking soda, baking powder, salt, and spices in a medium bowl, and add one third of the mixture into the batter. Mix in half the cream, and scrape the bottom and sides of the mixing bowl with a rubber spatula. Mix in half of the remaining dry ingredients, then the remaining cream, and scrape the bowl again. Mix in the remaining dry ingredients and drop 3-tablespoon-sized mounds of the batter onto a parchment-lined baking sheet.
  4. Bake for 20 minutes and cool completely before filling with peanut butter frosting.

For the filling

  1. Place the peanut butter and butter in a large mixing bowl. Blend with an electric mixer on low speed until fluffy, about 30 seconds.
  2. Add the confectioners’ sugar, milk, and the vanilla. Blend with the mixer on low speed until the sugar is well combined, 1 minute. Increase the speed to medium and beat until the frosting lightens and is fluffy, 1 minute more.
  3. Blend in up to 1 tablespoon milk if the frosting seems too stiff. Don’t be afraid to play with proportions. These are by no means hard and fast measurements. If you want the peanut butter flavor to be stronger…add more peanut butter. If you like sweeter or thicker frostings…add more sugar. If you like smoother, thinner frostings, add more milk. I don’t believe in settling for less than perfection. So play around until you have your perfect peanut butter frosting!
