Pumpkin Cookie Swirled Brownies

Ingredients

You will need:

  • One box brownie mix
  • One batch pumpkin cinnamon chip cookie dough

Pumpkin Cinnamon Chip Cookie Dough:

  • 1/2 cup (1 stick) softened butter
  • 1 cup brown brown sugar
  • 1/4 cup white sugar
  • 1 teaspoon vanilla
  • 5 tablespoons pumpkin purée
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 1/2 cups all-purpose flour
  • 1 cup cinnamon or chocolate chips

Instructions

To make the cookie dough:

  1. Combine the butter and sugars until mixed well (mixture will be thick).
  2. Add the vanilla and pumpkin and mix until smooth.
  3. Combine all the dry ingredients and add to the rest mixing just until combined.
  4. Stir in the chocolate chips.

To make the brownies:

  1. Prep brownie batter according to box instructions.
  2. Spread brownie batter evenly over the bottom of an 8×8 pan.
  3. Scoop globs (they don’t have to be at all precise, just plop them on there) of the cookie dough on top of the brownie batter until you reach your desired amount. You don’t have to use all of it. Leftover cookie dough can be baked into cookies or eaten with a spoon (there’s no eggs!).
  4. Bake according to box directions. Check at the suggested time, but know that they might need a few more minutes due to the added thickness.
