We’ve been patient, haven’t we? Starbucks has been out there with their PSL’s since August, trying to cajole us into jumping the gun on pumpkin season by offering frozen frappuccino PSL’s designed to trick our tastebuds into thinking pumpkin is actually appropriate for 80-degree weather. (It’s not, get your head in the game.) But we were strong. We held out, because we know that pumpkin tastes better when we’ve waited for it. When we’ve pined and daydreamed about that first pumpkin treat of fall, our fantasies so vivid we could smell the cinnamon.
The pining is over my friends. The moment has arrived. You know why?
Because today is the first *official* day of fall. Finally, finally it’s pumpkin season! We can eat pumpkin flavored everything to our heart’s content! Starting with Pumpkin Overnight Oats.
We’ve got plenty of yummy pumpkin desserts in the pipeline (don’t worry!), but we’re kicking off pumpkin season with something rather decidedly more wholesome than a cupcake – Pumpkin Overnight Oats. Have you tried overnight oats before? They’re like oatmeal, only the oats are combined with yogurt or milk and you eat them cold. If that sounds icky, you’ll just have to trust me.
(Or maybe you’re just not an oatmeal person. That’s okay too.)

Audrey and I have been making a lot of overnight oats lately, usually with a generous spoonful of PB2 mixed in. They’re really easy to prepare the night before, and Morning You will gratefully gobble down the gourmet ready-to-go breakfast waiting in the fridge, perhaps while sticking an IV coffee drip into your arm. Or maybe you’ll savor it over the morning paper or the novel you’re reading, sipping your coffee so leisurely you have time to blow on it until it cools. There are two kinds of people.
Either way, unlike the PSL (sad face), Pumpkin Overnight Oats are a way to start your day with a dose of pumpkin that you can feel good about. Packed with the whole grain goodness of oats and lasting energy from the low-fat protein in the greek yogurt that will have you coasting right over that mid-morning crash (+bonus vitamins in the pumpkin), Pumpkin Overnight Oats are a power breakfast to be sure. Not to mention yummy! I think we should all get into this. (I already am.)
I don’t know about you, but I’m ready to spend the next three months of crisp autumn mornings cozied up in flannel pajamas, dousing my Pumpkin Overnight Oats and coffee each with liberal sprinklings of cinnamon, and savoring every pumpkin-y, wholesome bite.

Pumpkin Overnight Oats

Ingredients
- 3/4 c. greek yogurt
- 1/4 c. pumpkin
- 1/4 tsp. pumpkin spice
- 1/4 tsp. cinnamon
- 2 tsp. Truvia
- 1/2 tsp. vanilla
- 1/2 c. quick oats
Instructions
- Mix greek yogurt, pumpkin, pumpkin spice, cinnamon, Truvia, and vanilla until smooth. Stir in quick oats. Cover with plastic wrap and store in fridge overnight. In the morning, sprinkle with a fresh dash of cinnamon and enjoy!
