My friend and I have a deal going where I bake her what she wants and she gives me some of her family’s homemade curry. I am a huge fan of this deal. Huge fan. Her curry is the bomb dot com, and she is always very ambitious in coming up with baked goods. I’m only too happy to oblige to her requests.
Her most recent request? Brownies with Oreos and Nutella frosting. Um, yes please.
As soon as I gave her these Stuffed Oreo Nutella Brownie Cups she A) raved about them B) ate three in one day and C) started thinking up more ideas. Can you see why we’re friends? Because A) appreciation for dessert B) hearty appetite for dessert and C) is creative when it comes to dessert.
You know those people who just want vanilla and chocolate desserts alllll the time? Don’t get me wrong, those things are great and all, but not all the time. I like some creativity. Brown some butter. Use Butterfinger instead of chocolate chips. Add some peanut butter and Ritz crackers. Maybe some Momofuku crumb. Anything.
I’ve found that I get a little unfairly annoyed with people who are not very creative with desserts. Like, when they ask me to bake something for them and I get excited and then they just say “Um, like chocolate cake and like maybe some vanilla frosting.” And I just want to grab them by the shoulders and shake them and then feed them some salted caramel. Guys. There are So. Many. Possibilities.
Anyways, part of the reason this girl is my friend is because she is not one of those boring dessert people. And I think I’m rubbing off on her, she’s getting even more creative. Like these Stuffed Oreo Nutella Brownie Cups.

Ingredients
Oreo Nutella Brownie Cups
- 1 batch of your favorite brownie batter or box brownies
- 1 package Oreos
- 1 batch Nutella frosting (below)
Nutella Frosting
- 1 cup (230g) unsalted butter, softened to room temperature
- 2 cups (240g) confectioners’ sugar
- 3/4 cup (222g) Nutella
- 2 teaspoons vanilla extract
- salt to taste
Instructions
- Preheat oven according to recipe or box directions. Grease a cupcake tin or line it with cupcake liners.
- Spoon brownie batter into each tin, about halfway full.
- Press Oreo down into them and then cover with more brownie batter. Bake according to your recipe’s directions. Let cool before frosting with Nutella frosting.
- While the brownies are baking, make the Nutella frosting. Beat softened butter on medium speed with an electric or stand mixer. Beat for 2-3 minutes until smooth and creamy. You want a very creamy base before adding anything else.
- Add 2 cups of powdered sugar and continue to beat on medium speed. The mixture will be fairly thick. Add the Nutella and continue to beat on medium speed. Add the vanilla extract.
- If the frosting is too thick, add some heavy cream (1 Tablespoon measurements at a time). If the frosting is too thin, add more powdered sugar (1/4 cup measurements at a time). Taste the frosting and add salt to cut the sweetness. I added about 1/4 teaspoon of salt to mine.
- Frost cooled brownies.
