It’s amazing how long things can last on my to-do list. I recently went back and edited footage from me and my siblings’ 2022 trip to Coachella. I’m only just now posting these Tofu Almond Butter Sandwiches, which has been sitting in my drafts since 2018!! I don’t want to talk about how many things on my to do list now I’ll probably end up crossing off in 2026. Unfortunately this appears to be how I operate.
I first made this sandwiches back in high school, and I’m pretty sure it was Molly who first found the recipe. Since then, I haven’t made them consistently, but I’ve occasionally remembered them and will go through kicks of making them a lot. It’s an unexpected combination of ingredients, but somehow it works! It’s very simple to put together too. It’s really good with plain almond butter, but recently I’ve been getting back into making my own nut butters at home, and I can confirm it’s also good with a little more pizazz.
My two new favorite nut butters are made by taking either these hot honey cashews or these crunchy chili onion peanuts from Trader Joe’s and blending them in a food processor until they’re a nut butter. It’s so simple, and makes for some great flavors. You can put them on toast to make it savory, use in these sandwiches, or just eat with a spoon. I imagine they’d be good in some sauces too.
Please forgive how barebones this recipe is… I am not good at writing savory recipes out, and especially when it’s something as simple as these sandwiches. Just put these ingredients together on your favorite bread! You’ve all made sandwiches before! I’m just telling you a new combo! Go nuts, add as much almond butter as you want! Add different veggies! YOLO!

Ingredients
Extra-firm tofu
Olive oil and salt
Almond butter (or nut butter of choice)
Sliced cucumbers
Bread of choice
Instructions
- Slice tofu into strips and press with paper towel to dry. Fry on the stove with olive oil, and season with salt or other seasonings as desired.
- Toast bread and spread nut butter on both sides.
- Slice cucumbers, and layer cucumbers and tofu.
